Spaghetti Aglio e Olio with Extra Virgin Olive Oil

This Spaghetti Aglio e Olio recipe combines garlic, fresh chilli, parsley and extra virgin olive oil in a simple pasta dish full of flavour. With only a few main ingredients, each one plays an important role, particularly the olive oil that forms the base of the sauce.

For our version, we use Euthis Greek Extra Virgin Olive Oil together with fresh garlic and cayenne pepper. A small amount of butter adds richness, while reserved pasta water helps bring everything together into a smooth and glossy sauce that coats the spaghetti.

Because the olive oil remains such a noticeable part of the finished dish, this is a recipe where its aroma and flavour can really be appreciated. Finally, an extra drizzle of Euthis before serving adds fresh green notes and a gentle peppery finish.

Spaghetti Aglio e Olio Recipe

Ingredients

  • 200 g spaghetti
  • 5 to 6 garlic cloves, thinly sliced
  • 1 to 2 fresh cayenne peppers, thinly sliced
  • 3 tbsp Euthis Greek Extra Virgin Olive Oil
  • 30 g butter
  • 1 handful fresh parsley, finely chopped
  • Salt, to taste
  • 50 to 100 ml reserved pasta water

Method

  1. Cook the spaghetti: Bring a large pot of generously salted water to a boil. Cook the spaghetti until al dente according to the package instructions. Before draining, reserve about 100 ml of the pasta water.
  2. Infuse the olive oil: Meanwhile, heat the Euthis Greek Extra Virgin Olive Oil in a large skillet over low to medium heat. Add the sliced garlic and fresh cayenne peppers. Cook gently for 2 to 3 minutes so their flavours can infuse the olive oil without allowing the garlic to burn.
  3. Add the butter: Next, add the butter and allow it to melt into the garlic, chilli and olive oil mixture.
  4. Toss the pasta: Add the drained spaghetti directly to the skillet and toss thoroughly. Gradually add a small amount of reserved pasta water while continuing to toss until the sauce becomes smooth and glossy and coats the spaghetti evenly.
  5. Add the parsley: Remove the skillet from the heat and add the finely chopped fresh parsley. Toss again so it is distributed throughout the pasta.
  6. Serve: Divide the spaghetti between two plates. Finally, finish with a drizzle of Euthis Greek Extra Virgin Olive Oil, fresh parsley and a few slices of fresh cayenne pepper. Serve immediately.

Why Extra Virgin Olive Oil Matters in Aglio e Olio

Extra virgin olive oil is central to this Spaghetti Aglio e Olio recipe. Rather than simply being used to cook the garlic, it becomes part of the sauce itself. As the garlic and chilli warm gently in the oil, their flavours are released into it and distributed throughout the pasta.

Tips for the Best Spaghetti Aglio e Olio

Keep the heat controlled when cooking the garlic. If the garlic becomes too dark, it can develop an unpleasant burnt flavour that will spread through the entire sauce. Therefore, cook it slowly and move it around the skillet regularly.
