This loaded hummus recipe combines creamy hummus with ripe tomatoes, red onion, crumbled feta, oregano and a generous drizzle of extra virgin olive oil.

It takes around 10 minutes to prepare and works well as a simple Mediterranean appetiser, sharing plate or light lunch served with warm pita bread.

For this recipe, we use Euthis Greek Extra Virgin Olive Oil as the finishing oil. Its fresh green character and gentle peppery finish complement the creamy hummus, salty feta and sweet tomatoes without overpowering them.

Because the olive oil is added without heating, its fresh aroma and flavour remain particularly noticeable in the finished dish.

Method

  1. Prepare the hummus: Spoon the hummus onto a wide serving plate and spread it evenly. Use the back of a spoon to create a shallow well in the centre.
  2. Add the tomatoes and onion: Scatter the diced tomatoes and red onion evenly over the hummus.
  3. Add the feta: Crumble the feta over the top, keeping some larger pieces for texture.
  4. Season: Sprinkle with dried oregano and freshly ground black pepper.
  5. Finish with extra virgin olive oil: Drizzle generously with Euthis Greek Extra Virgin Olive Oil, allowing some of the oil to collect in the centre and run across the hummus and toppings.
  6. Serve: Garnish with fresh parsley if desired and serve immediately with warm pita bread.

Why Extra Virgin Olive Oil Works So Well with Hummus

Extra virgin olive oil plays an important role in this loaded hummus recipe because it adds both flavour and texture.

The olive oil sits on the surface of the hummus and gradually combines with the tomatoes, feta and oregano. Each scoop therefore brings together the creamy hummus with fresh vegetables, salty cheese and a small amount of olive oil.

Using extra virgin olive oil as a finishing oil also allows its fresh aroma and peppery character to remain clearly noticeable.

The bitterness and gentle pungency found in many fresh extra virgin olive oils can be influenced by naturally occurring phenolic compounds. You can learn more about polyphenols in olive oil and how they influence flavour and olive oil quality.

How to Make the Best Loaded Hummus

This is a very simple recipe, so the quality of the individual ingredients makes a noticeable difference.

Use ripe tomatoes with plenty of flavour and remove any excess watery juice before adding them to the hummus. This helps prevent the plate from becoming too wet.

Dice the red onion finely so that its flavour spreads evenly across the dish without becoming too strong in individual bites.

When adding the feta, keep some larger pieces rather than crumbling it too finely. This gives the finished hummus more texture and creates a better contrast with the creamy base.

Finally, add the extra virgin olive oil just before serving. A generous drizzle across the hummus and toppings helps bring all the ingredients together.

Why Tomato, Feta and Oregano Work with Hummus

The toppings in this recipe bring together several familiar Mediterranean flavours.

Fresh tomato adds sweetness and acidity, feta brings saltiness and richness, while red onion adds a sharper fresh flavour. Dried oregano gives the dish its characteristic herbal aroma.

Extra virgin olive oil connects these ingredients with the hummus and softens the sharper flavours of the onion and feta.

The same combination of tomatoes, feta, oregano and olive oil also works particularly well in our Mediterranean Chickpea Salad with Feta and Oregano.

Should You Add Olive Oil to Hummus Before Serving?

Yes. Adding extra virgin olive oil immediately before serving is one of the simplest ways to add fresh flavour to hummus.

A finishing drizzle remains on the surface rather than disappearing completely into the hummus. This means you can taste the olive oil together with the toppings in each bite.

Can You Make Loaded Hummus Ahead of Time?

You can prepare some of the ingredients in advance, but this loaded hummus is best assembled shortly before serving.

Dice the tomatoes and onion ahead of time and keep them chilled in separate containers. The feta can also be crumbled in advance.

For the best texture, spread the hummus onto the plate and add the toppings just before serving. Finish with oregano, black pepper and extra virgin olive oil at the last moment.

This helps keep the tomatoes fresh and prevents their juices from making the hummus watery.

What to Serve with Loaded Hummus

Warm pita bread is the simplest accompaniment, but this hummus also works well with toasted flatbread, fresh vegetables or as part of a larger Mediterranean sharing table.

You can serve it alongside olives, grilled vegetables, salads and other small dishes.
