Bruschetta Romana is a simple Italian inspired appetiser made with ripe tomatoes, fresh basil, garlic and good quality extra virgin olive oil. Because the recipe uses only a few ingredients, their freshness and quality make a noticeable difference to the final flavour.
For this recipe, we use Euthis Greek Extra Virgin Olive Oil, which adds a fresh, fruity character and a gentle peppery finish to the tomato topping. The olive oil is mixed with the tomatoes and then added again before serving. As a result, its aroma and flavour remain clearly noticeable in the finished bruschetta. This gentle peppery sensation is also associated with naturally occurring polyphenols in olive oil.
Bruschetta is ideal as a light starter, a quick lunch or part of a larger Mediterranean style meal. However, it is best prepared shortly before serving so the toasted bread remains crisp while the tomatoes stay fresh and juicy.
Bruschetta Romana Recipe
Serves: 4
Prep time: 10 minutes
Cook time: 5 minutes
Ingredients
- 1 baguette or rustic Italian bread
- 3 to 4 ripe tomatoes, finely diced
- 1 small garlic clove
- 1 handful fresh basil leaves, chopped
- 3 tbsp Euthis Greek Extra Virgin Olive Oil
- 1 tbsp balsamic vinegar
- Salt, to taste
- Freshly ground black pepper, to taste

Method
- Prepare the tomato topping: Combine the diced tomatoes, basil, balsamic vinegar, 2 tbsp of the Euthis Extra Virgin Olive Oil, salt and black pepper. Mix gently and leave for 5 to 10 minutes so the flavours can combine.
- Toast the bread: Meanwhile, slice the bread into thick slices and toast on a grill pan, skillet or under the grill until golden and crisp on both sides.
- Add the garlic: While the bread is still warm, lightly rub each slice with the cut side of the garlic clove. A little garlic is enough because it should complement rather than dominate the tomatoes.
- Assemble: Next, spoon the tomato mixture generously over the toasted bread just before serving.
- Finish: Finally, drizzle the remaining Euthis Extra Virgin Olive Oil over the bruschetta and garnish with a few fresh basil leaves.
How to Make the Best Bruschetta Romana
The best bruschetta starts with ripe, naturally sweet tomatoes. Therefore, choose tomatoes that are firm but fully ripe and have plenty of flavour. If they release a lot of liquid after chopping, allow them to drain briefly before adding the other ingredients. This helps prevent the toasted bread from becoming soggy too quickly.
Additionally, avoid preparing the finished bruschetta too far in advance. You can prepare the tomato topping a few minutes earlier, but the bread should be toasted and topped shortly before serving. This way, you keep the contrast between crisp bread and juicy tomatoes.
Why Extra Virgin Olive Oil Matters

Extra virgin olive oil is one of the key ingredients in this Bruschetta Romana recipe. Since it is used without prolonged cooking, its natural aroma and flavour remain an important part of the dish. For this reason, choosing a good quality olive oil can make a significant difference even in such a simple recipe. The quality of the finished oil begins much earlier, from harvesting the olives to extraction and storage. You can learn more about how organic extra virgin olive oil is made from grove to bottle.
Euthis Greek Extra Virgin Olive Oil brings fresh, fruity notes together with a gentle peppery finish. Moreover, adding part of the oil directly to the tomato mixture allows it to combine with the tomato juices, basil and balsamic vinegar. The character of an olive oil is also influenced by the place where the olives are grown, including the local climate and growing conditions. Serving Bruschetta Romana
